Nutritious Carrots, Apple,Banana and oats muffin (low dairy, low sugar)

My  3 years old son is in that phase that scares parents where they stop eating everything good and their diet get limited to few things. Getting veggies in their diet is closer to a miracle. So I wanted to get something he loves that is muffin, with a bigger turn on the nutritious side with no butter and natural yogurt and coconut oil instead. For high fiber are oats, apples with peels, banana, dried coconut and a big carrot. No refined sugars, I used maple syrup and organic agave and I sprinkled Demerara raw sugar on top ( has large crystals that give it a crunchy texture, I learned that this particular type of sugar is produced in Mexico, India, Hawaii, among other countries.)

My 6 years old ate one, good sign, than he ate one more…the question was if Jimmy would like it, as soon as he woke up from his nap I offered. He asked me what was that…I said Apple muffins ( do not say too much) …ok, he said and gave a big bite and ate it all!!! So if you re a desperate parent like me, this is a good option as a nutritious snack and guilty free!

ingredients:

  • 1 cup of all purpose flour
  • 1/2 cup of organic coconut flour
  • ½ cup liquid coconut oil
  • ¼ cup organic agave syrup
  • 1/4 cup of maple syrup
  • 2 eggs
  • 2 mashed bananas
  • 1/2 apple grated with skin
  • 1 big carrot grated fine
  • 1/4 cup of natural yogurt
  • 1/4 cup of 14% sour cream
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • 1/3 teaspoon of  cloves powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup of  Rolled oats or quick oats
  • 2 table spoons of dried coconut
  • demerara sugar for the top of the  muffins
Instructions
Pre heat the oven to 375F. Add coconut oil ( microwave for 22 seconds if is its solid form) the maple and the agave syrup in a medium container. Than cream them together using a mixer, do that for 2 minutes. Than add the eggs, the natural yogurt , sour cream and the vanilla, mix them together with the mixer.
Now put the bananas, salt , clove powder,  cinnamon, the baking powder, baking soda, and this time use a manual hand egg beater mixer until well combined.  Than add regular flour and the coconut flour and oats and with a wooden spoon stir until combined. Add the dried coconut and make sure you press out any extra liquid from the apples and carrots and carefully mix together with the spoon. It is ready! Get a 12-cup muffin pan and arrange the  Baking paper in each one. Use a ice cream scoop to transfer the mixture to each cup. Than sprinkle with the Demerara raw sugar. Bake at 375 F for 25 minutes than extra 10 min on 325 F (or until toothpick inserted into center comes out clean).
